Gingerbread pancakes are a favorite this time of year. Served warm with a drizzle of maple syrup, these spice filled pancakes make a crowd-pleasin’, boy-lovin’ breakfast.
You won’t believe how easy this mix is to make. And to give! Make one batch and you’ll have enough gingerbread pancake mix for your family and to give as delicious Christmas gifts. This recipe {adapted from More-with-Less Cookbook} makes approximately six jars of homemade Gingerbread Pancake Mix.
Gingerbread Pancake Mix
- 6 cups flour
- 2 cups powdered milk
- 1 tablespoon salt
- 6 tablespoons baking powder
- 6 tablespoons sugar
Stir together ingredients in a large bowl. Add 1 1/2 cup of mix to a glass jar. Makes 6 jars. Top mix in each jar with:
- 1 tablespoon cinnamon
- 1 tablespoon ginger
- 1 tablespoon nutmeg
Seal jars and decorate with a festive bow, a cinnamon stick, and a tag with instructions for making pancakes.
To make Gingerbread Pancakes:
- 1 1/2 cup of mix
- 1 egg
- 2 tablespoons canola oil
- 1 cup water
Mix until well combined. Fry on a hot griddle. Makes 24 small or 12 large pancakes.
